Spicy Shrimp and Grits

Embracing a little bit of spice in the morning is a great way to wake up.  My family was visiting and I made this dish for them. They said the house smelled delicious with the aroma of onion and peppers.

3 Tablespoons Quick Grits
1 cup water
1/4 cup frozen sliced peppers (green, red, yellow) and onions
2 tablespoons fresh chopped yellow onion and tomato
1 teaspoon red pepper flakes
1 cup frozen cooked and peeled shrimp
1 tablespoon or more Louisiana hot sauce for topping

  • Rinse frozen shrimp in warm water and remove tails. Drain and set aside.
  • Bring water to a boil. Stir in grits slowly. Reduce heat. Simmer for 1 minute.
  • Add shrimp, peppers, onions, onion/tomato mix, and red pepper flakes into grits.
  • Bring to a boil.
  • Reduce heat to medium/low and cook for 5 minutes.
  • Stir occasionally to avoid the bottom sticking.
  • Serve on a plate topped with hot sauce. Add as much you like!

Serves 2. Serve each half with fruit.
